In my experience, mentoring takes place on many levels, in many guises: It can encompass everything from intellectual brain-storming and detailed discussions about research questions, to hands-on training with new equipment and trouble-shooting buggy software. 

The ultimate aim, though, remains the same: To provide students with the information, tools and support they need to successfully transition from students to colleagues. I find that I learn a tremendous amount from my students, and I feel very fortunate to have the opportunity to work with such outstanding young researchers.
